Day 226: Saucy Stuff

Today has been a fairly quiet day.

I’ve done some bits and pieces down the High Street. Run a few errants. Made a fabulous (if not oversized) lasagne with full fat cheese sauce.

Not the least healthy thing I’ve ever made. Although the novelty of making a proper roux with butter & flour may not leave me for a while. I foresee some Rachael Ray-style pan gravies heading our way once more.

I’m not going to bad mouth Slimming World as it is a fantastic plan and it works. But my word I missed proper sauces. It’s too much faff to weigh & then syn each component when making a sauce as I ‘eyeball’ it, so I’ve just not bothered. A good sauce can liven up a lot of everyday items.

And something else, I figured out what was missing from my meat sauce. Sugar. Not much, just a pinch – it has made all the difference. Almost tastes like Mum’s, her lasagne was renowned.

What I need to remember is that sugar, butter & cheese isn’t the enemy, and very tasty – in moderation.

Today’s Activity: Reading Lorraine Pascale’s first two recipe books.
