Another Monday is here. And today it’s a special edition: May Day Bank Holiday Meal Planning Monday!
Saturday: Kiddy-Friendly Chicken Korma
Sunday: Gammon Sunday Roast
Monday: Ladybird Pizza and Chips
Tuesday: Cheese & Onion Pasty Pie
Wednesday: Scotch eggs & chips
Thursday: Cheesy Pasta (the regular returns)
Friday: Chilli Lime Chicken & noodles
This week is a slightly different one in that Friday I will actually be cooking as I’m out for 2 different events on the Friday evening as well as Beavers on Thursday night too.
This week is all about speed and preparation.
The gammon for the roast was a smoked joint and I cooked that on low in the medium-sized slow cooker. After 3 hours I trimmed all the fat off and then left it on low until half an hour before we ate.
The pizzas I did tonight used English Muffins as the base with a tsp of tomato puree. Next time I will use a smidge of pesto for a bit more flavour. (I will be blogging that recipe this week at some point)
The scotch eggs will be made using supermarket sausages so I can keep on top of the syns this week and I will oven bake those too.
